Ridiculously Quick Pork Chops
So the other day I was working late.. Really late! My boss was teaching a doctorate course for the week and I was needed bright and early (even on the holiday!) to keep things running. No big deal, really except for the fact that I was EXHAUSTED!
Anyway, this is about the meal and not about my day. This meal took no time at all because even while I was cooking it, I was face timing with one of my best buds Jared, giving each other tours of our houses. Here's what you need:
Gather these goodies:
1 Packet of bone-in Pork Chops (about 4-6)
1 Packet of Hidden Valley Ranch seasoning packet
2-3 TBS of flour
Salt & Pepper (a tiny, tiny bit)
2 TBS olive or coconut oil
1 TBS cornstarch
Portion of any side you want
Directions:
Heat oven to 350 degrees. Prep your chops (the pork, not your mouth). Mix packet contents with the flour in a separate plate. I used whole wheat flour - like that was going to do anything dietary wise. We're eating pork! But hey, it's all I had. Dredge each chop and set aside to rest.
In a separate pan, heat oil on high and sear each chop so that it is brown on each side. About 3-4 minutes. Turn and repeat on the other side. Transfer chops to foil-covered baking sheet (if you want to save someone from washing extra. This just may be you!) and bake in the oven for 10 minutes.
Whatever you do.... DON'T CLEAN OUT THE PAN you just fried your chops in. There's good stuff there! While the pan is hot, pour a little bit of water to break up the delicious bits of sweet goodness from the bottom. This is where your cornstarch comes in. Cornstarch is your FRIEND. Use it anytime you need a quick gravy. Mix cornstarch with a COLD WATER and add to the pan over medium heat. Add salt and pepper to taste.
I already had I used Idahoan Quick Potatoes. They're usually 10 for $10.00 at the grocery store at times and even cheaper if you have a coupon. Of course you would like to envision yourself making delectable fluffy potatoes, but "ain't nobody got time for that!" right?
I already had my tea kettle going for hot water so by the time the chops came out of the oven, I threw 2 cups of water in a bowl and voila! C'est fini! Dinner is served.
