Mashed What?
Okay, so if you're anything like me you've probably been on a diet since 6th grade. Seriously, I'm not joking. I'm always trying to find the miracle "thing" that's going to set my life in order and on the fast track to greatness... all from a piece of fruit.
Yeah right.
Either way, I have come to the point where I know I should eat better. So when I heard about eating cauliflower like mashed potatoes, I was not in a hurry to try it. Eventually I did, however, and boy it was delish! The first time around, I added two potatoes to my mix because I wasn't too sure my guys would enjoy or be able to tell the difference. Not that it would matter anyway, they eat whatever you put in front of them. My first bite opened my eyes and tastebuds to how good it was I eliminated the potatoes altogether. So glad I did.
AND it helps with the 6th grade diet thing...
I recently received a request on Instagram (follow@320Living) for the recipe, and I was more than happy to oblige!
Gather these goodies:
1 head of cauliflower
1 TBS butter
Milk (I use almond)
Salt & Pepper to taste
Directions:
Steam, I repeat STEAM your cauliflower until tender. Don't boil it because you'll be squeezing the living daylights out of it later to get the excess water out. And you have the SMASHED cauliflower to deal with. What would that look like?
In a food processor (or bowl if you're using a beater) combine your steamed cauliflower and butter and blend well. Pulse if using a food processor. Check consistency and add milk AS NEEDED. If you don't feel you want any milk, don't use it - it's not a requirement.
Just be careful how much you do add of either your milk and butter. Potatoes have the ability to stand up to those additives, but you'll end up with cauliflower soup if you overdo it.
Season with salt and pepper and that's it! I usually serve mine with roasted chicken and pour sauce over my cauliflower for more flavor.
